🌭 Chili Dog Casserole (Low-Carb, Bean-Free)

🧂 Ingredients:
- 1 lb ground beef
- ½ lb ground pork (or just more beef if preferred)
- 4 slices bacon, chopped
- 6 beef hot dogs, sliced into bite-sized pieces
- 2 tablespoons chili seasoning (store-bought or homemade*)
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika (optional but awesome)
- Salt & pepper to taste
- 1 ½ cups shredded cheddar cheese
- Optional toppings: chopped green onions, diced pickles, mustard drizzle
🍳 Instructions:
- Cook the bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving a bit of bacon grease in the pan.
- Brown the ground beef and pork in the same skillet. Break up the meat as it cooks and season with chili seasoning, garlic powder, onion powder, paprika, salt & pepper.
- Once browned and no longer pink, add sliced hot dogs to the skillet and cook for 2–3 minutes until they get a little sear.
- Stir in cooked bacon, then sprinkle 1 cup of cheddar over the top. Reduce heat to low and let the cheese melt in.
- Transfer to a baking dish (or leave it in an oven-safe skillet), sprinkle remaining ½ cup cheddar on top.
- Broil on high for 2–4 minutes until the cheese on top is melted and bubbly.
- Serve hot, topped with optional green onions, diced pickles, or a mustard drizzle for that full chili dog effect!
🧂 Homemade Chili Seasoning (optional):
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne (optional)
