🍗 Carnivore Chicken Meatballs
Ingredients:

1 lb ground chicken (thigh meat preferred for fat content)

1 egg

1/4 cup grated Parmesan cheese (optional, for a cheesy kick – skip if strict carnivore)

1 tsp sea salt

1/2 tsp garlic powder (optional – strict carnivores may omit)

1/4 tsp black pepper (optional)

1–2 tbsp beef tallow, duck fat, or butter (for cooking)
Instructions:

Preheat oven to 375°F (190°C), or get a skillet hot on the stove if pan-frying.

Mix everything in a bowl:

Ground chicken
-
Egg
-
Salt
-
Parmesan and spices if using

Form into balls (about golf ball size, or whatever size you like).

Cook:

Oven: Place on a parchment-lined tray. Bake for 20–25 minutes, flipping halfway, until golden and cooked through.

Pan-fry: Heat your fat in a skillet over medium heat. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through (about 12–15 mins).

Optional: Broil for 2 minutes at the end for a crispy top.
Tips:

Add a bit of chicken liver (1–2 tbsp puréed) for nutrient density.

Serve with bone broth or dip in egg yolks or melted butter.

Store leftovers in the fridge up to 4 days or freeze.
