🍗 Carnivore Crispy Zero Carb Chicken

🧂 Ingredients:

1–1.5 lbs chicken thighs, wings, or tenders (skin-on for best crisp!)

2 eggs

1/2 cup pork rind crumbs (finely crushed)

1/4 cup grated Parmesan cheese (adds crispy texture)

Salt to taste

1/2 tsp garlic powder (optional)

Beef tallow, lard, duck fat, or ghee for frying

🔥 Instructions:

Prep chicken: Pat dry and season lightly with salt.

Make coating station:

Bowl 1: Whisked eggs

Bowl 2: Mix pork rind crumbs + Parmesan + optional garlic powder

Coat the chicken:

Dip each piece in egg
-
Then dredge in the pork rind/cheese mixture

Press firmly so it sticks!

Heat fat: In a cast iron skillet, heat 1/4 inch of your cooking fat over medium-high heat.

Fry:

Place chicken in hot fat skin-side down.

Cook 4–5 minutes per side (depends on thickness) until golden brown and internal temp hits 165°F (74°C).

Don’t overcrowd the pan — crispiness needs space.

Drain on rack or paper towel. Let rest 5 min for max crunch.
🔁 Oven / Air Fryer Version:
Oven: Bake at 425°F (220°C) on a wire rack over a sheet pan for ~25 minutes. Flip halfway.
Air Fryer: 390°F (200°C) for 18–22 minutes, flip once.
