🧂 Ingredients:

1 lb chicken breast or tenders (or ground chicken)

1 oz cheddar cheese, shredded

3 oz cream cheese, softened

2 tsp sea salt

1 oz pork rind crumbs (can crush your own or use store-bought)

⅓ cup grated parmesan cheese
🔪 Instructions:

Preheat Oven to 400°F (200°C).
Alternatively, you can air fry at 375°F (190°C) for extra crispiness. -
Prepare Chicken

If using whole chicken breast/tenders, pulse in a food processor until ground.

If using ground chicken, move to next step.

Mix the Meat Base
In a large bowl, combine the chicken, cheddar cheese, cream cheese, and sea salt. Mix thoroughly until well incorporated. You can use clean hands or a spoon. -
Form Nuggets
Scoop the mixture and shape into nugget-sized pieces using your hands or a small scoop (about 1½–2 tablespoons each). You should get around 12–15 nuggets. -
Coat the Nuggets
In a shallow bowl, combine pork rind crumbs and parmesan cheese. Roll each nugget in the mixture until fully coated. -
Bake or Air Fry

Oven: Place nuggets on a parchment-lined baking sheet. Bake for 15–20 minutes, flipping halfway through, until golden and internal temp hits 165°F (74°C).

Air Fryer: Place nuggets in a single layer in the basket. Cook for 12–15 minutes, flipping halfway.
