🧂Ingredients:
- 1 (2.5 to 3 lb) pork loin roast (not tenderloin — they’re different cuts!)
- 2–3 tbsp pork lard, tallow, or butter
- 1–1½ tsp salt
- ½ tsp black pepper (optional for carnivore)
- ½ tsp garlic powder (optional for carnivore)
- 1 tsp smoked paprika (optional)
- Fresh thyme or rosemary sprigs (optional but aromatic)
👩🍳 Instructions:
- Preheat oven to 375°F (190°C).
- Pat pork loin dry with paper towels. Score the fat cap lightly (don’t cut into the meat).
- Rub the pork loin all over with lard or butter, then season generously with salt (and spices, if using).
- Place the pork in a roasting pan or cast iron skillet, fat side up. Add herbs around the base if using.
- Roast uncovered for about 20 minutes per pound, or until internal temp hits 140–145°F (60–63°C).
- For a 3 lb roast, that’s roughly 60–75 minutes.
- If you want a crisper top, broil for 2–3 minutes at the end.
- Remove and rest the roast for 10–15 minutes before slicing — this helps it stay juicy.
