  • 1 tsp smoked paprika (optional)
  • Fresh thyme or rosemary sprigs (optional but aromatic)

  1. Preheat oven to 375°F (190°C).
  2. Pat pork loin dry with paper towels. Score the fat cap lightly (don’t cut into the meat).
  3. Rub the pork loin all over with lard or butter, then season generously with salt (and spices, if using).
  4. Place the pork in a roasting pan or cast iron skillet, fat side up. Add herbs around the base if using.
  5. Roast uncovered for about 20 minutes per pound, or until internal temp hits 140–145°F (60–63°C).

  6. If you want a crisper top, broil for 2–3 minutes at the end.
  7. Remove and rest the roast for 10–15 minutes before slicing — this helps it stay juicy.
