🧾 INGREDIENTS
MEAT BASE:
-
1.5 lbs (680g) ground beef (80/20)
-
1/2 lb (225g) bacon, chopped
-
(Optional: 100g ground beef liver or heart, minced – for the ancestral edge)
DAIRY & EGGS:
-
6 whole eggs
-
1 cup (240ml) heavy cream
-
2 cups (200g) shredded cheddar or aged cheese
-
1 cup (100g) mozzarella (optional for melt factor)
-
2 tbsp cream cheese (for thickness & tang)
-
Salt to taste
-
Optional: pinch of garlic powder, smoked paprika, or pepper for light flavoring
🔪 INSTRUCTIONS
1. Preheat Oven
Set oven to 375°F / 190°C. Grease a large cast iron skillet or casserole dish generously with animal fat (bacon grease, tallow, or butter).
2. Cook the Bacon
In a pan, cook chopped bacon until crispy. Remove and set aside, save the fat.
3. Brown the Beef
In the same pan with bacon fat, brown the ground beef (and optional organ meat). Season lightly with salt. Cook until no pink remains, then stir in the crispy bacon. Drain excess grease if needed (but some is flavor!).
4. Mix the Custard
In a bowl, whisk together:
-
6 eggs
-
1 cup heavy cream
-
2 tbsp cream cheese (softened)
-
Pinch of salt & optional seasonings
5. Assemble the Beast
In your greased baking dish:
-
Layer all the meat
-
Pour egg-cream mixture evenly over it
-
Add shredded cheddar + mozzarella on top
6. Bake
Bake uncovered for 30–40 minutes until:
-
Center is set
-
Cheese is golden
-
Edges are bubbling like molten dairy lava
Want it crispier on top? Broil for 2–3 minutes at the end. 🔥
7. Rest & Devour
Let cool for 10 minutes (if you can wait). Slice and conquer. 💪
