-
1 lb ground pork (or ground beef, or a 50/50 mix)
-
4 slices bacon, finely chopped and pre-cooked
-
2 eggs
-
4 oz shredded cheese (cheddar or mozzarella — optional but delicious)
-
1 tsp salt (or to taste)
-
1/2 tsp black pepper (optional, not strict carnivore)
-
Optional: 1/2 tsp dried liver powder or crumbled cooked liver for nutrient boost
🧑🍳 Instructions:
-
Preheat Oven: 375°F (190°C)

-
Form Meatballs: Roll into 1.5-inch balls (makes about 16–20).
-
Bake: Place on a parchment-lined baking sheet. Bake for 18–20 minutes, or until golden brown and cooked through (internal temp: 160°F/71°C).
-
Optional: Broil for 2–3 minutes at the end for extra crisp tops.
🧊 Storage:
-
Refrigerate up to 5 days.
-
Freeze in a single layer, then transfer to bag — reheat in oven or skillet.
These meatballs are great dipped in egg yolk, topped with a fried egg, or eaten cold on the go.
