🥩 Carnivore Flatbread (Zero-Carb)
Ingredients:
-
2 large eggs
-
1 cup shredded mozzarella (or any low-moisture cheese – mozzarella melts best)
-
1 tbsp beef tallow, bacon grease, or butter (for greasing or crisping)
Optional (if not super strict):
-
Pinch of salt
-
Dash of gelatin or pork rinds for more structure
Instructions:
-
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or use a silicone mat.
-
Melt cheese slightly (microwave ~30 sec or melt gently on stove) until soft and stretchy.
-
Whisk eggs, then stir into melted cheese. Mix until it becomes a smooth, sticky batter.
-
Spread batter on your baking sheet—aim for a 1/4-inch thick oval or rectangle. Thinner = crispier.
-
Bake for 12–15 minutes until golden and firm. You can broil for 1–2 minutes at the end for a crispy top.
-
Cool slightly before slicing or folding—it firms up as it cools.
Optional Add-ins for Texture:
-
1 tbsp powdered pork rinds = more chew
-
1 tsp gelatin powder = more elasticity
Serving Ideas:
-
Use as a base for meat “sandwiches”
-
Cut into strips for dipping in bone broth or yolk
-
Fold into taco shells or mini wraps
