🧀 Carnivore Mozzarella & Parmesan Meatballs
Zero carbs • Super filling • Juicy + Cheesy
🥩 Ingredients:
-
1 lb ground beef (80/20 or fattier is best)
-
1/2 cup shredded mozzarella cheese
-
1/4 cup grated Parmesan cheese
-
1 large egg
-
1 tsp salt
-
1/2 tsp garlic powder (optional, but adds kick)
-
1/2 tsp onion powder (optional, or skip for strict carnivore)
-
Pinch of black pepper (optional)
-
1 tbsp heavy cream or beef broth (optional for extra tenderness)
🔥 For Stuffed Version (optional):
-
Cubes of mozzarella to stuff inside
🍳 Instructions:
-
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
-
Mix ingredients: In a large bowl, combine the ground beef, shredded mozzarella, Parmesan, egg, and seasonings. Mix until just combined — don’t overwork it.
-
Form meatballs: Roll into 1.5-inch balls. If you’re doing the stuffed version, press a cube of mozzarella into the center and seal it up.
-
Bake for 15–18 minutes, until golden and cooked through. Internal temp should hit around 160°F (71°C).
-
(Optional): Broil for 1–2 minutes at the end to get a crispy cheesy top.
🧈 Serving Suggestions:
-
Drizzle with melted butter or bacon fat
-
Dip in reduced bone broth or carnivore “gravy”
-
Serve on top of carnivore garlic breadsticks 😏
💡 Tips:
-
Swap beef with lamb, pork, or a mix for flavor variation
-
Add more Parmesan for crispier edges
-
Want even juicier meatballs? Mix in a bit of beef liver pate or a spoonful of ricotta (if tolerated)
Let me know if you want a version you can pan-fry instead of bake!
