🧀 Carnivore Mozzarella & Parmesan Meatballs

Zero carbs • Super filling • Juicy + Cheesy

🥩 Ingredients:

  • 1 lb ground beef (80/20 or fattier is best)

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1 large egg

  • 1 tsp salt

  • 1/2 tsp garlic powder (optional, but adds kick)

  • 1/2 tsp onion powder (optional, or skip for strict carnivore)

  • Pinch of black pepper (optional)

  • 1 tbsp heavy cream or beef broth (optional for extra tenderness)

🔥 For Stuffed Version (optional):

  • Cubes of mozzarella to stuff inside

🍳 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Mix ingredients: In a large bowl, combine the ground beef, shredded mozzarella, Parmesan, egg, and seasonings. Mix until just combined — don’t overwork it.

  3. Form meatballs: Roll into 1.5-inch balls. If you’re doing the stuffed version, press a cube of mozzarella into the center and seal it up.

  4. Bake for 15–18 minutes, until golden and cooked through. Internal temp should hit around 160°F (71°C).

  5. (Optional): Broil for 1–2 minutes at the end to get a crispy cheesy top.

🧈 Serving Suggestions:

  • Drizzle with melted butter or bacon fat

  • Dip in reduced bone broth or carnivore “gravy”

  • Serve on top of carnivore garlic breadsticks 😏

💡 Tips:

  • Swap beef with lamb, pork, or a mix for flavor variation

  • Add more Parmesan for crispier edges

  • Want even juicier meatballs? Mix in a bit of beef liver pate or a spoonful of ricotta (if tolerated)

Let me know if you want a version you can pan-fry instead of bake!
