🧂 Ingredients:

  • 1–1.5 lbs chicken thighs, wings, or tenders (skin-on for best crisp!)

  • 2 eggs

  • 1/2 cup pork rind crumbs (finely crushed)

  • 1/4 cup grated Parmesan cheese (adds crispy texture)

  • Salt to taste

  • 1/2 tsp garlic powder (optional)

  • Beef tallow, lard, duck fat, or ghee for frying


🛠️ Optional Seasoning Add-ins (for less-strict carnivore):

  • Black pepper

  • Paprika

  • Crushed red pepper


🔥 Instructions:

  1. Prep chicken: Pat dry and season lightly with salt.

  2. Make coating station:

    • Bowl 1: Whisked eggs

    • Bowl 2: Mix pork rind crumbs + Parmesan + optional garlic powder

  3. Coat the chicken:

    • Dip each piece in egg

    • Then dredge in the pork rind/cheese mixture

    • Press firmly so it sticks!

  4. Heat fat: In a cast iron skillet, heat 1/4 inch of your cooking fat over medium-high heat.

  5. Fry:

    • Place chicken in hot fat skin-side down.

    • Cook 4–5 minutes per side (depends on thickness) until golden brown and internal temp hits 165°F (74°C).

    • Don’t overcrowd the pan — crispiness needs space.

  6. Drain on rack or paper towel. Let rest 5 min for max crunch.


🔁 Oven / Air Fryer Version:

Oven: Bake at 425°F (220°C) on a wire rack over a sheet pan for ~25 minutes. Flip halfway.
Air Fryer: 390°F (200°C) for 18–22 minutes, flip once.
