🔥 Air Fryer “Fried” Chicken Thighs (Low-Carb & Keto)

🐔 Ingredients:

  • 4-6 boneless, skinless chicken thighs (or bone-in if you prefer)

  • 2 large eggs

  • 2 tablespoons half & half (or heavy cream)

  • 1.5 cups pork panko (aka crushed pork rinds)

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • Optional: dash of cayenne for heat


🧑‍🍳 Instructions:

  1. Preheat your air fryer to 390°F (or 400°F depending on your model).

  2. Make the egg wash: In a shallow bowl, whisk together the eggs and half & half until smooth.

  3. Season the pork panko: In another shallow bowl or dish, mix pork panko with garlic powder, paprika, salt, pepper, and cayenne if using.

  4. Coat the chicken:

    • Pat chicken thighs dry with paper towels.

    • Dip each thigh into the egg wash, coating completely.

    • Press into the pork panko mixture until fully coated.

  5. Air fry:

    • Lightly spray the air fryer basket with oil.

    • Place chicken thighs in a single layer (you may need to cook in batches).

    • Cook for 20 minutes at 390-400°F, flipping halfway through for even crispiness.

    • Internal temp should reach 165°F.

  6. Serve hot, optionally with a sugar-free dipping sauce (ranch, spicy mayo, etc.).


🍗 Tips:

  • Bone-in thighs work too—just add ~5 extra minutes to cook time.

  • Want extra crunch? Spray a light coat of avocado oil over the top before air frying.
