🧂 Ingredients:

  • 1 cup shredded mozzarella

  • 1/2 cup shredded cheddar or provolone (optional mix for flavor)

  • 1/4 cup grated Parmesan (for texture & crisp)

  • 1 egg

  • 2 tbsp pork rind crumbs (plus more for rolling)

  • Pinch of salt

  • 1/2 tsp garlic powder (optional)

🛠️ Optional: Add small cubes of mozzarella or cheddar inside for extra-gooey centers.


🧈 For Frying:

  • Beef tallow, lard, duck fat, or ghee (any carnivore-friendly fat)


🔥 Instructions:

  1. Mix it up: In a bowl, combine all cheeses, egg, pork rind crumbs, and seasonings. Mix into a thick dough-like consistency. Chill for 10–15 mins if it’s too soft to roll.

  2. Form balls: Scoop and roll into small balls (about 1 inch). Optional: press a cube of cheese in the center and seal around it.

  3. Coat (optional): Roll each ball in extra pork rind crumbs for a super crisp crust.

  4. Fry:

    • Heat fat in a small pan (~1 inch deep) over medium-high.

    • Fry balls in batches, turning to get all sides golden (about 2–3 mins total).

    • Don’t overcrowd the pan — they crisp better with space.

  5. Drain: Remove with slotted spoon, place on paper towel or wire rack.
