Mediterranean Delight: Greek Chicken Gyros with Cucumber Tzatziki

Ingredients:
For the Chicken Gyros:
1 lb boneless, skinless chicken thighs
3 tbsp olive oil
2 tbsp red wine vinegar
2 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt & pepper
4 large pita breads
Lettuce, tomato, red onion (for garnish)
For the Cucumber Tzatziki:
1 cup Greek yogurt
1 small cucumber, grated & drained
2 garlic cloves, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp dried or fresh dill
Salt & pepper
Instructions:
Marinate the Chicken:
Mix olive oil, vinegar, oregano, garlic & onion powders, paprika, salt & pepper. Add chicken and marinate for 1 hour (or overnight).
Make Tzatziki:
Combine yogurt, cucumber, garlic, oil, lemon juice, dill, salt & pepper. Chill for 30+ mins.
Grill the Chicken:
Cook chicken on grill/pan for 5–7 mins per side until cooked through (165°F). Rest, then slice.
Assemble Gyros:
Warm pita. Add chicken, lettuce, tomato, onion, and spoon on tzatziki.
