  • 1 tbsp (6g) instant sugar-free vanilla pudding mix – 25 cal, 0g protein (thickens and improves texture)

  • 2–4 tbsp zero-calorie sweetener (e.g. erythritol, monk fruit, stevia) – 0 cal

  • 1 tsp vanilla extract – 12 cal

  • 1/4 tsp xanthan gum (optional, for creaminess) – 0 cal

  • 1/2–1 cup ice cubes – 0 cal

  • Pinch of salt – 0 cal

  • Optional: 1 tbsp Greek yogurt or cottage cheese – ~20 cal, 2–3g protein (for added creaminess)


Instructions:

  1. Blend everything: In a high-speed blender (like a Ninja Creami, Vitamix, or NutriBullet), combine all ingredients. Blend until smooth and creamy. Add ice cubes gradually to thicken and chill the mixture.

  2. Taste & adjust: Adjust sweetness or vanilla as needed.

  3. Freeze (if using Ninja Creami): Pour the mixture into a Ninja Creami pint container and freeze for 24 hours. Spin on “Lite Ice Cream” or “Creami” mode. Re-spin with a splash of almond milk if needed.
