🍗 Carnivore Mayo Parmesan Chicken
Ingredients:
-
2–3 boneless, skinless chicken thighs or breasts
-
1/2 cup full-fat mayonnaise (ideally made with egg and animal fat like bacon grease or tallow — avoid seed oils if strict carnivore)
-
1/2 cup grated Parmesan cheese
-
1/2 tsp salt (adjust to taste)
-
Optional: pinch of black pepper or garlic powder (omit if strict carnivore)
🔥 Instructions:
1. Preheat Oven:
-
Preheat to 375°F (190°C).
2. Prep Chicken:
-
Pat chicken dry with paper towels.
-
Place in a greased baking dish or cast iron skillet.
3. Make Topping:
-
In a bowl, mix mayo and Parmesan (and any optional seasonings).
-
Spread the mayo-Parmesan mixture evenly over the chicken pieces.
4. Bake:
-
Bake uncovered for 25–35 minutes depending on thickness of chicken (until internal temp reaches 165°F / 74°C).
-
If desired, broil on high for 2–3 minutes at the end to brown the top.
5. Rest & Serve:
-
Let rest for 5 minutes.
-
Spoon pan juices over the top and serve!
🧈 Variations:
-
Use chicken thighs with skin-on for even more fat and flavor.
-
Add a bit of crumbled bacon on top before baking.
-
Swap Parmesan for Pecorino Romano for a sharper flavor.
