Carnivore Chicken & Bacon Casserole

Ingredients:

  • 2–3 cups cooked shredded chicken (rotisserie, boiled, or baked)

  • 6–8 slices bacon (chopped)

  • 4 oz cream cheese (softened)

  • ½ cup sour cream or heavy cream

  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)

  • 2 eggs (helps bind)

  • Salt to taste

  • Optional: pinch of garlic powder or smoked paprika (if you’re okay with light seasoning)


🔥 Instructions:

1. Cook the Bacon:

  • Chop bacon into bite-sized pieces and fry until crispy.

  • Remove with slotted spoon and set aside. Reserve a few tablespoons of bacon fat.

2. Preheat Oven:

  • Set oven to 375°F (190°C).

3. Mix the Base:

  • In a large bowl, mix together:

    • Cooked shredded chicken

    • Cream cheese, sour cream or heavy cream

    • Shredded cheese

    • 2 beaten eggs

    • Crispy bacon (save some for topping)

    • A bit of bacon fat for extra richness

  • Mix until creamy and well combined. Add salt to taste.

4. Assemble & Bake:

  • Pour mixture into a greased 9×9 or similar-sized casserole dish.

  • Top with reserved bacon and extra cheese if desired.

  • Bake uncovered for 25–30 minutes, or until golden and bubbling.

5. Cool & Serve:

  • Let sit for 5–10 minutes before serving — it thickens as it cools.


💡 Optional Add-Ons (still carnivore-friendly):

  • Add cooked ground beef or sausage for extra meat

  • Crack an egg on top before baking for a runny yolk finish

  • Mix in shredded pork belly or leftover carnivore meat scraps


🧊 Storage:

  • Keeps in the fridge for 4–5 days

  • Freezes well — reheat gently at 300°F covered with foil
