🥓🧀 Carnivore Bacon Wrapped Cheddar Meatballs
✅ Ingredients:
-
1 lb ground beef (80/20 for juiciness)
-
½ cup shredded cheddar cheese
-
1 tsp salt
-
½ tsp black pepper (optional)
-
12 slices bacon (thin-cut works best)
-
Optional: pinch of garlic powder or smoked paprika (if you want light seasoning)
🔥 Instructions:
1. Preheat oven to 400°F (200°C).
2. Mix the meatball base:
-
In a bowl, combine ground beef, shredded cheddar, salt, and pepper.
-
Mix gently to combine, don’t overwork.
3. Form meatballs:
-
Roll mixture into golf ball–sized meatballs (~1.5 inches diameter).
4. Wrap with bacon:
-
Cut bacon slices in half if needed.
-
Wrap each meatball with a bacon slice, securing with a toothpick if needed.
5. Bake:
-
Place meatballs on a wire rack over a baking sheet (to catch drippings).
-
Bake for 20–25 minutes or until bacon is crispy and meatballs are cooked through.
6. Serve hot:
-
Great on their own or with carnivore-friendly dipping sauce (like mayo mixed with a bit of bacon fat or hot sauce).
💡 Tips:
-
For extra melty cheese inside, press a small cube of cheddar into the center of each meatball before wrapping.
-
Cook low and slow if you want softer bacon (325°F for 35-40 mins).
-
Use a grill or air fryer for a smokier, crispier finish.
