Carnivore Chuck Roast Recipe
Ingredients:
- 3 to 4 lbs (1.4 to 1.8 kg) chuck roast
- 2 tbsp beef tallow or butter (for searing)
- 1 tsp sea salt
- 1/2 tsp black pepper (optional, depending on your strictness with carnivore diet)
- 4 garlic cloves, smashed (optional)
- 1 tbsp fresh rosemary or thyme (optional)
- 1/2 cup (120ml) beef broth (optional, for braising liquid)
Instructions:
- Preheat Oven:
- Preheat your oven to 300°F (150°C). This low and slow cooking method ensures a tender, melt-in-your-mouth roast.
- Prepare the Chuck Roast:
- Pat the chuck roast dry with paper towels to remove excess moisture. This helps achieve a good sear. Generously season the roast with sea salt and black pepper. If you’re following a strict carnivore diet, you can omit the pepper and garlic.
- Sear the Roast:
- Heat a large cast-iron skillet or oven-safe Dutch oven over medium-high heat. Add the beef tallow or butter. Once hot, sear the roast on all sides (about 3-4 minutes per side), until it’s nicely browned and caramelized. This step locks in flavor and creates a beautiful crust.
- Add Optional Aromatics (if using):
- If you’re not strict on carnivore, you can add smashed garlic cloves and fresh rosemary or thyme to the pot for extra flavor. These aromatics will infuse into the meat as it cooks.
- Braised Roast (optional):
- If you want a richer flavor and more tender texture, pour in the beef broth. This step is optional, but it adds moisture and creates a flavorful braising liquid. If you prefer a dry roast, skip the broth and proceed directly to the next step.
- Roast Low and Slow:
- Transfer the skillet or Dutch oven to the preheated oven. Roast for 3 to 4 hours, or until the meat reaches an internal temperature of 190°F (88°C). At this point, the chuck roast will be tender and shreddable.
- Rest and Slice:
- Remove the roast from the oven and let it rest for 10-15 minutes before slicing. This helps the juices redistribute. Slice against the grain for the most tender pieces.
- Serve:
- Serve the carnivore chuck roast as-is or pair it with your favorite carnivore-friendly sides, such as crispy bacon, steak, or bone broth.
Tip: For extra flavor, use the pan drippings as a rich sauce to pour over the sliced roast.
