Ingredients:

For the crust:

  • 1 ½ cups crushed pork rinds (unflavored)
  • 3 tbsp melted butter
  • 2 tbsp powdered beef gelatin (optional, for a firmer crust)

For the filling:

  • 16 oz cream cheese (softened)
  • 1/4 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract (optional, if you’re following a strict carnivore, you can skip)
  • 1/4 cup powdered erythritol or allulose (optional, for sweetness)
  • 1/4 cup heavy cream
  • Pinch of salt

Instructions:

  1. Prepare the Crust:
    • Preheat the oven to 325°F (165°C).
    • In a food processor, pulse the pork rinds until finely crushed (similar to graham cracker crumbs).
    • Add the melted butter and powdered beef gelatin (if using), mixing until the mixture sticks together.
    • Press the pork rind mixture into the bottom of a springform pan (8-9 inches), creating an even layer. Use a spoon to pack it tightly.
    • Bake the crust in the preheated oven for about 10–12 minutes, or until golden and crisp. Remove from the oven and set aside to cool.
  2. Prepare the Filling:
    • In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sour cream, eggs, vanilla extract (if using), powdered erythritol, and heavy cream. Mix until fully combined, ensuring there are no lumps.
    • Pour the cream cheese mixture over the cooled crust in the springform pan.
  3. Bake the Cheesecake:
    • Bake the cheesecake at 325°F (165°C) for 40–45 minutes, or until the edges are set and the center slightly jiggles when gently shaken. If needed, cover the edges with aluminum foil to prevent over-browning.
    • Turn off the oven, crack the oven door, and let the cheesecake cool completely inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
  4. Serve:
    • Once chilled, carefully remove the cheesecake from the springform pan and slice into portions. Enjoy plain, or with a dollop of whipped cream (optional).
