Mixed Seafood Scampi Pizza 

Ingredients:

2 fish fillets (cod, halibut, or tilapia)

200g (7 oz) shrimp, peeled and deveined

200g (7 oz) scallops, patted dry

Salt and pepper to taste

2 tbsp (28g) unsalted butter, melted

2 cloves garlic, minced

1 tbsp (15ml) lemon juice
Instructions:

Prepare the Fish Crust: Season the fish fillets with salt and pepper. Place them in the air fryer basket, making sure they are not overlapping. Cook at 180°C (356°F) for 5 minutes to partially cook the fish. Remove from the air fryer and set aside.

Make the Scampi Sauce: In a small bowl, mix the melted butter, minced garlic, and lemon juice. Set aside.

Assemble the Pizza: Spread the scampi sauce evenly over the partially cooked fish fillets. Arrange the shrimp and scallops on top of the sauce.

Air Fry: Return the seafood-covered fish fillets to the air fryer basket. Cook at 180°C (356°F) for 8-10 minutes or until the seafood is cooked through and the fish is flaky.

Serve: Remove the seafood scampi pizza from the air fryer, garnish with freshly chopped parsley, and serve hot.
