- 2 medium red beets, roasted & sliced

- 1 tbsp shallot, finely chopped
- 1 tbsp fresh thyme leaves
- 1/2 tsp orange zest
Dressing:
- 1 tsp Dijon mustard
- 2 tsp maple syrup
- 1 tbsp apple cider vinegar
- 1 1/2 tbsp fresh orange juice
- 5 1/2 tbsp olive oil
- 1/4 tsp salt (to taste)

Instructions:
1️⃣ Roast the Beets:
- Preheat the oven to 400°F (200°C).
- Wrap the beets individually in foil and bake for 40–50 minutes until fork-tender.
- Let them cool, peel, and slice into wedges or rounds.
2️⃣ Make the Dressing:
- In a small bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, orange juice, orange zest, olive oil, salt, and pepper until emulsified.
3️⃣ Assemble the Salad:
