Ingredients:

- 2 chicken breasts, cut into bite-sized pieces
- 1 ½ cups mushrooms, sliced
- ½ green bell pepper, diced
- ½ red bell pepper, diced
- 2 tbsp oil (vegetable or sesame)
- 2 cloves garlic, minced
- 1-inch ginger, minced
Sauce:
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp dark soy sauce (for color & depth)
- ½ tsp sugar
- 1 tsp cornstarch, mixed with 2 tbsp water
- 1 tsp black pepper, freshly ground
- ½ tsp white pepper (optional for extra spice)
Garnish:
- Chopped green onions
- Extra black pepper, to taste
Instructions:
1️⃣ Prep the Chicken:
- Season chicken pieces with a pinch of salt, black pepper, and white pepper.
2️⃣ Sear the Chicken:
- Heat 1 tbsp oil in a pan over medium-high heat.
- Add chicken and cook until golden brown, about 5-6 minutes.
- Remove and set aside.
3️⃣ Sauté the Veggies:
- In the same pan, add 1 tbsp oil, garlic, and ginger. Sauté for 30 seconds.
- Add mushrooms and bell peppers, stir-fry for 2-3 minutes.
4️⃣ Make the Sauce:
- Mix soy sauce, oyster sauce, dark soy sauce, sugar, cornstarch slurry, and black pepper in a small bowl.
5️⃣ Combine & Cook:
- Return the chicken to the pan.
- Pour in the sauce and stir well. Cook for 2 minutes until thickened.
6️⃣ Garnish & Serve:
- Sprinkle with green onions and extra black pepper.
- Serve hot with steamed rice or noodles.
