Ingredients:

Instructions:

  1. Bring steak to room temperature:
    Remove steaks from the fridge about 30 minutes before cooking. Pat dry with paper towels. This helps ensure a good sear.

  2. Season:
    Generously salt both sides of the steak. That’s all you need—keep it simple for carnivore. You can also lightly coat the steak with a bit of beef tallow for added richness.

  3. Preheat air fryer:
    Preheat your air fryer to 400°F (204°C) for about 3–5 minutes.

  4. Cook steak:
    Place ribeyes in the air fryer basket in a single layer (do not overlap).

    • Medium-rare: Air fry for about 10–12 minutes, flipping halfway through.

    • Medium: 13–14 minutes total.

    • Adjust time slightly based on your steak’s thickness and air fryer model.

  5. Rest the steak:
    Remove steaks and let them rest for 5–10 minutes. This lets juices redistribute.

  6. Optional butter finish:
    Add a pat of butter or spoon melted beef tallow over the steak while resting for extra flavor and fat.


Tips:

  • Use a meat thermometer for perfect doneness:

    • Medium-rare: 130°F (54°C)

    • Medium: 140°F (60°C)

  • For a crustier exterior, let the steak dry out uncovered in the fridge for a few hours (dry brine).
