Carnivore Bacon Cheeseburger Soup
Ingredients:
-
1 lb ground beef (80/20 is ideal for flavor)
-
6 strips of bacon, chopped
-
2 cups beef broth (preferably homemade or carnivore-friendly)
-
1 cup heavy cream (for richness)
-
1/2 cup cream cheese, softened (optional for extra creaminess)
-
1 1/2 cups shredded cheddar cheese (or Muenster cheese for a mild, smooth flavor)
-
1 small onion, diced (optional, if you tolerate it on carnivore)
-
2 tbsp butter (for extra richness)
-
1 tsp garlic powder
-
1 tsp onion powder (optional, if using the onion)
-
Salt and pepper to taste
Instructions:
-
Cook the bacon:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Once cooked, remove the bacon and set it aside, leaving some bacon grease in the pot for flavor. -
Brown the ground beef:
In the same pot, add the ground beef and cook over medium-high heat. Break it apart with a spoon and cook until browned and fully cooked through. If there’s any excess fat, drain it, leaving a small amount in the pot. -
Cook the onions (optional):
If you’re using onions, add them to the pot with the beef and sauté them in the remaining fat for about 2-3 minutes, or until they soften and become translucent. If you’re skipping onions, just proceed to the next step. -
Add liquids:
Pour in the beef broth and heavy cream, stirring well to combine. Bring the mixture to a simmer. If you’re using cream cheese, add it now and stir until it melts and fully incorporates into the soup base, making it extra creamy. -
Season the soup:
Add the garlic powder, onion powder (if using), salt, and pepper to taste. Stir the soup and allow it to simmer for about 10 minutes, letting all the flavors meld together. -
Add the cheese:
Lower the heat and gradually stir in the shredded cheddar cheese, a little at a time, until it fully melts into the soup. If the soup gets too thick, you can add a little more beef broth or heavy cream to reach your desired consistency. -
Finish the soup:
Once the cheese is fully melted and incorporated, stir in the crispy bacon that you set aside earlier. Let everything heat through for a couple of minutes. -
Serve and enjoy:
Taste and adjust seasoning as needed. Serve the soup hot, garnished with more crispy bacon and shredded cheese if desired.
Tips:
-
More cheese: If you’re a cheese lover, feel free to add extra cheese for a cheesier, richer flavor.
-
Toppings: You can add some extra carnivore-friendly toppings like crispy pork rinds, extra bacon, or even a dollop of sour cream (if tolerated) for added richness.
-
Beef broth: If you’re able to get your hands on homemade beef broth, it adds an amazing depth of flavor. Store-bought broth can be used, but check the ingredients to ensure it’s clean and carnivore-friendly.
