✅ Ingredients:

  • 8 mozzarella cheese sticks (string cheese or cut from a block)

  • 8 slices of thin-cut bacon

  • Optional: 1 egg + 1 tbsp grated parmesan or pork rind dust for a crispier coating (still zero-carb)


🔥 Instructions:

  1. Freeze the cheese sticks:
    Place mozzarella sticks in the freezer for 30–60 minutes. This keeps them from melting too fast during cooking.

  2. Wrap in bacon:
    Wrap each frozen cheese stick tightly with a slice of bacon. If needed, use toothpicks to secure the ends. You can also spiral-wrap for full coverage.

  3. Optional coating (extra crispy):
    Beat 1 egg in a bowl. In another bowl, mix 1 tbsp grated parmesan or pork rind “flour.” Dip each bacon-wrapped stick in egg, then the coating. Still zero-carb!

  4. Cook — choose your method:

    • Air Fryer:
      Preheat to 390°F (200°C). Air fry bacon-wrapped sticks for 8–10 minutes, turning halfway, until bacon is crisp and cheese starts to ooze.

    • Oven:
      Preheat to 400°F (205°C). Place on a wire rack over a baking sheet. Bake for 15–20 minutes or until bacon is crispy.

    • Pan-fry:
      Cook on medium heat, turning frequently to crisp all sides. Watch closely to prevent cheese from leaking too soon.

  5. Rest briefly & serve:
    Let cool 1–2 minutes before serving. Cheese firms slightly and holds together better.

  • Use thin bacon so it crisps before the cheese melts too much.

  • For strict carnivore, skip any herbs/spices — but if you’re flexible, a sprinkle of garlic powder or Italian seasoning on the bacon before cooking is amazing.
