Carnivore Beef Heart Stew
Ingredients:
- 1 lb beef heart, trimmed and cut into 1-inch cubes
- 2 tablespoons beef tallow (or butter)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (optional)
- 2 cups beef bone broth (optional, for extra richness)
- 1 tablespoon fresh thyme (optional)
- 2 cloves garlic, minced (optional)
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Beef Heart:
- Trim any excess fat or connective tissue from the beef heart and cut it into 1-inch cubes. Make sure the heart is clean and properly prepared before cooking.
- Brown the Beef Heart:
- In a large, heavy-bottomed pot or Dutch oven, melt the beef tallow (or butter) over medium-high heat.
- Add the cubed beef heart to the pot in batches, being careful not to overcrowd it. Sear the pieces until they are browned on all sides, about 4-5 minutes per batch.
- Once browned, remove the beef heart cubes from the pot and set them aside.
- Simmer the Stew:
- In the same pot, lower the heat to medium. If desired, add minced garlic and cook for 1-2 minutes until fragrant (optional).
- Add the beef bone broth to the pot, scraping up any browned bits from the bottom for extra flavor.
- Return the beef heart to the pot, stirring to combine. Add the salt, pepper, and fresh thyme (optional).
- Bring the mixture to a simmer, cover the pot, and cook for 1-1.5 hours, or until the beef heart is tender and the flavors have melded together.
- Finish and Serve:
- Once the beef heart is tender, taste the stew and adjust seasoning with salt and pepper if necessary.
- Garnish with fresh parsley, if desired, for a pop of color and added freshness.
- Serve hot and enjoy this nutrient-dense, flavorful carnivore stew.
This hearty, nutrient-packed stew is an excellent way to enjoy beef heart, which is rich in vitamins and minerals, while sticking to the principles of the carnivore diet.
