Carnivore Beef Stroganoff Recipe

🥩 Carnivore Beef Stroganoff Recipe (From Scratch)

Servings: 2–3
Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:

  • 1 lb (450g) beef (ground beef or thinly sliced steak like ribeye or sirloin)
  • 2 tbsp tallow, butter, or ghee (for cooking)
  • 4 oz (115g) cream cheese
  • 1/2 cup heavy cream
  • 1/2 cup beef bone broth (optional, for thinner sauce)
  • 1 tsp sea salt (to taste)
  • Optional: 1 egg yolk (for extra richness and protein)
  • Optional (strict carnivores may omit): pinch of garlic powder

Instructions:

  1. Cook the Beef:
In a large skillet, heat the tallow over medium-high heat. Add the beef and cook until browned and cooked through. If using sliced steak, sear both sides until nicely browned.
  2. Add Cream Base:
Reduce heat to medium-low. Stir in the cream cheese and let it melt into the beef. Then slowly pour in the heavy cream while stirring.
  3. Add Broth (Optional):
If you prefer a saucier stroganoff, stir in the beef bone broth and simmer for 5–7 minutes until slightly thickened.
  4. Season and Enrich:
Add salt to taste. If desired, whisk in an egg yolk at the end for extra richness (remove from heat before adding to avoid curdling).
  5. Serve Hot:
Enjoy as is, or spoon over scrambled eggs, poached eggs, or carnivore flatbread.

Tips:

  • For extra umami, add a spoonful of liver pâté or bone marrow.
  • Store leftovers in the fridge and reheat gently on the stove.
