- 1 lb (450g) beef (ground beef or thinly sliced steak like ribeye or sirloin)
- 2 tbsp tallow, butter, or ghee (for cooking)
- 4 oz (115g) cream cheese
- 1/2 cup heavy cream
- 1/2 cup beef bone broth (optional, for thinner sauce)
- 1 tsp sea salt (to taste)
- Optional: 1 egg yolk (for extra richness and protein)
- Optional (strict carnivores may omit): pinch of garlic powder
Instructions:
- Cook the Beef:
In a large skillet, heat the tallow over medium-high heat. Add the beef and cook until browned and cooked through. If using sliced steak, sear both sides until nicely browned. - Add Cream Base:
Reduce heat to medium-low. Stir in the cream cheese and let it melt into the beef. Then slowly pour in the heavy cream while stirring. - Add Broth (Optional):
If you prefer a saucier stroganoff, stir in the beef bone broth and simmer for 5–7 minutes until slightly thickened. - Season and Enrich:
Add salt to taste. If desired, whisk in an egg yolk at the end for extra richness (remove from heat before adding to avoid curdling). - Serve Hot:
