Carnivore Cake

Ingredients:

  • 8 eggs, separated (yolks and whites)
  • 1/2 cup cream cheese (softened)
  • 1 tsp vanilla essence
  • Stevia (to taste, depending on how sweet you want it)
  • 300 ml double cream
  • Pinch of salt

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease or line a cake pan with parchment paper.
  2. Whisk egg whites: In a large mixing bowl, beat the egg whites with a pinch of salt until stiff peaks form. Set aside.
  3. Prepare the batter: In another bowl, combine the egg yolks, cream cheese, vanilla essence, stevia, and double cream. Whisk until smooth and well incorporated.
  4. Fold in egg whites: Gently fold the beaten egg whites into the egg yolk mixture in batches, being careful not to deflate the egg whites. Continue folding until everything is combined.
  5. Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 20-30 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  6. Cool: Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.

Hazelnut Ice Cream

Ingredients:

  • 3 eggs, separated
  • 300 ml double cream
  • Pinch of salt
  • Sugar-free hazelnut syrup (to taste, start with 2-3 tbsp and adjust based on sweetness preference)

Instructions:

  1. Whisk egg yolks: In a mixing bowl, whisk the egg yolks until smooth and pale. Add the sugar-free hazelnut syrup and a pinch of salt. Whisk until well combined.
  2. Whip the cream: In another bowl, beat the double cream until it forms soft peaks.
  3. Combine the mixtures: Gently fold the whipped cream into the egg yolk mixture until everything is evenly combined.
  4. Whisk the egg whites: In a separate bowl, beat the egg whites until stiff peaks form, and carefully fold them into the cream and egg mixture.
  5. Freeze: Pour the mixture into a freezer-safe container and freeze for at least 4 hours or overnight until firm.

Serving:
