Carnivore Cake
Ingredients:
- 8 eggs, separated (yolks and whites)
- 1/2 cup cream cheese (softened)
- 1 tsp vanilla essence
- Stevia (to taste, depending on how sweet you want it)
- 300 ml double cream
- Pinch of salt
Instructions:
- Preheat your oven to 180°C (350°F) and grease or line a cake pan with parchment paper.
- Whisk egg whites: In a large mixing bowl, beat the egg whites with a pinch of salt until stiff peaks form. Set aside.
- Prepare the batter: In another bowl, combine the egg yolks, cream cheese, vanilla essence, stevia, and double cream. Whisk until smooth and well incorporated.
- Fold in egg whites: Gently fold the beaten egg whites into the egg yolk mixture in batches, being careful not to deflate the egg whites. Continue folding until everything is combined.
- Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 20-30 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Cool: Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.
Hazelnut Ice Cream
Ingredients:
- 3 eggs, separated
- 300 ml double cream
- Pinch of salt
- Sugar-free hazelnut syrup (to taste, start with 2-3 tbsp and adjust based on sweetness preference)
Instructions:
- Whisk egg yolks: In a mixing bowl, whisk the egg yolks until smooth and pale. Add the sugar-free hazelnut syrup and a pinch of salt. Whisk until well combined.
- Whip the cream: In another bowl, beat the double cream until it forms soft peaks.
- Combine the mixtures: Gently fold the whipped cream into the egg yolk mixture until everything is evenly combined.
- Whisk the egg whites: In a separate bowl, beat the egg whites until stiff peaks form, and carefully fold them into the cream and egg mixture.
- Freeze: Pour the mixture into a freezer-safe container and freeze for at least 4 hours or overnight until firm.
Serving:
Serve a slice of the carnivore cake with a scoop of homemade hazelnut ice cream on top! You could also drizzle a bit more sugar-free hazelnut syrup over the ice cream for an extra burst of flavor. Enjoy! 😊
