Carnivore Cheesecake Recipe
Ingredients:
-
Crust (optional, but recommended for a traditional cheesecake experience):
-
1 cup pork rinds, crushed (for a crunchy, salty base)
-
2 tbsp butter, melted
-
-
Filling:
-
3 cups cream cheese, softened (make sure it’s full-fat)
-
1/2 cup heavy cream
-
3 large eggs
-
1/4 cup powdered beef gelatin (or you can use collagen for a firmer texture)
-
1 tsp vanilla extract (optional for flavor, depending on your preference)
-
1/4 tsp salt (optional, for added flavor)
-
1/4 cup butter, melted
-
Instructions:
-
Preheat your oven to 325°F (165°C).
-
Make the crust (optional):
-
In a bowl, combine the crushed pork rinds with the melted butter. Stir until the pork rinds are fully coated.
-
Press the mixture into the bottom of a greased 9-inch springform pan (or pie dish) to form a crust.
-
Bake in the preheated oven for 8–10 minutes, just until it starts to brown. Remove from the oven and set aside to cool.
-
-
Prepare the cheesecake filling:
-
In a large mixing bowl, beat the cream cheese until smooth and creamy.
-
Add the heavy cream, eggs, melted butter, salt (if using), and vanilla extract (optional), then beat until fully combined.
-
In a separate small bowl, dissolve the beef gelatin in 1/4 cup of hot water (or follow the instructions on the gelatin package). Once dissolved, add it to the cream cheese mixture and stir until fully incorporated.
-
-
Assemble the cheesecake:
-
Pour the cheesecake filling over the cooled crust in the springform pan.
-
Smooth the top with a spatula.
-
-
Bake:
-
Place the cheesecake in the oven and bake for 45–55 minutes, or until the center is set but still slightly wobbly (it will firm up as it cools).
-
If the top starts to brown too much, you can tent the cheesecake with aluminum foil.
-
-
Cool:
-
Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight for best results.
-
-
Serve:
-
Once fully chilled, remove the cheesecake from the springform pan, slice, and enjoy!

This carnivore cheesecake is rich and creamy, with a savory crust. You can tweak the recipe depending on your specific carnivore diet preferences, but this one keeps it fairly simple and close to the core ingredients.
