Carnivore Chili
Ingredients:

2 lbs ground beef (80/20 for flavor, but you can use a leaner cut if you prefer)

1/2 lb ground pork (optional, you can use all beef if preferred)

1/2 cup beef broth (preferably homemade or carnivore-friendly)

1/2 cup heavy cream (adds richness and smooth texture)

1 small onion, diced (optional, if tolerated)

2 cloves garlic, minced (optional, if tolerated)

1-2 tbsp chili powder (optional, for a bit of flavor—optional if you prefer to stay completely clean)

1 tsp cumin (optional, for flavor—only if you’re okay with spices)

1 tsp smoked paprika (optional, for flavor—only if tolerated)

Salt and pepper to taste

1 tbsp beef tallow or butter (for cooking)

1/2 tsp cayenne pepper (optional, for heat)

1 tbsp apple cider vinegar (optional, adds a nice acidity)
Instructions:

Cook the bacon:
In a large pot or Dutch oven, heat the beef tallow or butter over medium heat. Add the chopped bacon and cook until it becomes crispy. Remove the bacon and set aside, leaving the bacon fat in the pot. -
Brown the ground meats:
Add the ground beef and ground pork (if using) to the pot. Break it apart with a spoon and cook until browned and fully cooked through. Stir occasionally to prevent burning. -
Cook the onions and garlic (optional):
If you’re using onions and garlic, add them to the pot with the meat and cook until softened and fragrant, about 2-3 minutes. -
Add liquids and seasonings:
Pour in the beef broth and heavy cream, stirring to combine. Bring the mixture to a simmer. Add chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper to taste. Stir everything together, then reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavors to meld. -
Final touches:
If the chili gets too thick, you can add a little more broth or cream to reach your desired consistency. Taste the chili and adjust seasonings as needed. Add the crispy bacon back into the pot and stir it in. -

Once everything is heated through and the chili has thickened to your liking, serve it hot! You can top it with extra crispy bacon, a dollop of sour cream (if tolerated), or shredded cheese for added flavor, if desired.
