Carnivore Cloud Cubes
Fluffy, protein-rich, creamy bites for carnivores. Dairy and egg-based, optionally frozen or chilled.
🥩 Ingredients:

1 cup heavy cream (or raw cream, if you have access)

½ cup water or bone broth (for blooming gelatin)

2 tablespoons beef gelatin powder (for structure)

4 oz cream cheese, softened (or mascarpone, for a smoother version)

2 tablespoons butter or tallow, softened
-
2–3 egg whites (pasteurized or lightly cooked if you’re concerned about raw eggs)

Pinch of salt

(Optional) 1 tsp vanilla extract or a few drops of stevia (relaxed carnivore only)

Bloom the gelatin:

In a small bowl, combine the ½ cup of cold water or broth with 2 tablespoons gelatin. Stir well and let sit for 5 minutes to bloom.

Heat the cream mixture:

In a saucepan over medium-low heat, combine heavy cream, cream cheese, and butter/tallow. Stir until smooth and melted.

Do not boil — just heat enough to fully combine.

Melt the gelatin:

Once bloomed, microwave the gelatin mix for 10–15 seconds or stir it into the hot cream mixture until fully dissolved and smooth.

Whip the egg whites:

In a separate clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. This adds the “cloud” texture.

Combine:

Slowly fold the cream/gelatin mixture into the whipped egg whites. Be gentle to keep it fluffy.

(Optional: Add vanilla if using.)

Pour and set:

Pour the mixture into a silicone mold, parchment-lined baking dish, or an ice cube tray for “cube” shapes.

Smooth the top and refrigerate for at least 2–3 hours, or until firm. For a frozen treat, freeze for 1–2 hours instead.

Cut and enjoy:

Once firm, slice into cubes or pop out of molds. Serve cold or partially frozen for a firmer texture.

Store in the fridge for up to 5 days.

Can be frozen in an airtight container for up to 1 month — they taste like mini ice cream bites!

Sweeter: Add egg-based carnivore whipped cream or a touch of vanilla/stevia (if tolerated).
