Carnivore Crispy Salmon Bites
🧂 Ingredients:

1 lb (450g) skin-on salmon, cut into bite-sized cubes

2 tbsp tallow, duck fat, or butter (for frying)

Salt to taste

Optional coatings:

2–3 tbsp crushed pork rinds (for extra crunch)

1 egg, beaten (for helping coating stick if needed)

🔪 Instructions:

Prep salmon: Pat the salmon cubes dry with paper towels. This helps them get crispy. Leave the skin on for extra crunch if you like.

Optional coating:

For extra crispiness, lightly toss the salmon bites in crushed pork rinds.

If needed, dip each cube in beaten egg first, then coat in pork rinds.

Heat fat: In a skillet over medium-high heat, melt the tallow, duck fat, or butter until hot but not smoking.

Fry bites: Add salmon bites in a single layer. Cook 2–3 minutes per side, until golden brown and crispy on the outside and cooked to your desired doneness.

Drain & salt: Remove and place on a paper towel-lined plate. Sprinkle with salt while hot.

Serve with whipped sour cream, egg yolk butter, or a dipping sauce made from egg yolks and tallow for a full carnivore pairing.
