Carnivore Chili (Beef Lover’s Edition)
Thick, meaty, and loaded with umami, this chili is perfect for strict carnivores or anyone on keto/zero-carb.
📝 Ingredients:

2 lbs ground beef (80/20 or fattier)

1 lb ground pork or pork belly, chopped small (adds richness)

½ lb beef liver or heart (optional, for nutrient density)

1 tbsp beef tallow or bacon grease

1 tbsp smoked salt (or regular salt + liquid smoke)

1 tsp black pepper (optional for less strict carnivores)

1 tsp paprika or chili powder (optional—omit for zero-carb)

½ cup beef bone broth (homemade, gelatinous is best)

Optional: crumbled bacon, shredded cheese, raw egg yolk, or sour cream for topping
🍳 Instructions:
1️⃣ Render the Fat:
In a large pot or Dutch oven, heat beef tallow until melted. Add ground beef and pork. Brown over medium-high heat until deeply caramelized.
2️⃣ Add Organ Meat (Optional):
Add finely chopped liver or heart. Cook until no longer pink. Stir often—it blends in well for nutrients and flavor.
3️⃣ Season:
Add smoked salt, optional pepper, and any spices you’re allowing. Stir well. If you’re strict carnivore, just use salt and tallow.
4️⃣ Add Bone Broth:
Pour in bone broth and simmer on low for 20–30 minutes, uncovered, until the chili thickens and the fat rises to the top.
5️⃣ Finish & Serve:
Taste for salt. Top with:
