Yield:
8–12 donuts (depending on size of pan)
Can also be baked as a cake in a 9″x13″ dish
Prep Time:
15 minutes
Bake Time:
20–25 minutes
Total Time:
35–40 minutes
Ingredients
-
8 large eggs
-
8 oz cream cheese (room temperature)
-
1/2 cup heavy cream (for topping, optional)
Instructions
🔥 1. Preheat Oven
Preheat your oven to 300°F (150°C). Grease your donut pan or 9″x13″ baking dish with butter or animal fat (tallow/lard) for best results.
🍳 2. Separate Eggs
-
Carefully separate the egg yolks and egg whites into two large mixing bowls.
🧀 3. Mix Yolks & Cream Cheese
-
Combine the 8 egg yolks with 8 oz of cream cheese.
-
Mix until smooth and well-blended (a hand mixer or whisk works well here).
☁️ 4. Beat Egg Whites to Stiff Peaks
-
Using a clean mixer, beat the 8 egg whites until stiff peaks form.
-
You’ll know they’re ready when you can turn the bowl upside down and they don’t move.
🌀 5. Combine Gently
-
Slowly fold the yolk/cream cheese mixture into the whipped whites.
-
Be gentle and do not over-mix — this helps keep your donuts fluffy.
🧁 6. Pour into Pan
-
Pour mixture evenly into a donut pan or spread into a greased 9″x13″ pan if making a cake-style version.
-
Fill donut molds about ¾ full.
🔥 7. Bake
-
Bake at 300°F for 20–25 minutes, or until the tops are just turning golden brown and a toothpick comes out clean.
-
If using a cake pan, baking may take up to 30 minutes.
❄️ 8. Cool & Top
-
Let donuts cool in the pan for 10 minutes before removing.
-
Meanwhile, whip the heavy cream until stiff peaks form.
🍥 9. Add Topping (Optional but Fun!)
-
Dip the tops of your cooled donuts into the whipped cream, or pipe it on top for a frosted look.
🧊 Storage Tips
-
Store in an airtight container in the fridge for up to 5 days.
-
Best enjoyed chilled or lightly reheated.
📝 Notes
-
These are naturally sweet and fluffy, despite no added sugar.
-
Optional: Add a pinch of salt or vanilla extract if you’re not strict carnivore.
-
Kids love them as is — or you can freeze extras for quick treats.
