Ingredients:

  • 4 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, Gruyère, or a mix)
  • 2 tbsp cream cheese (softened)
  • Optional: pinch of salt or 1/4 tsp baking powder (makes them fluffier, but skip for strict carnivore)

Instructions:

  1. Preheat Oven: 375°F (190°C)
  2. Prep Muffin Tin: Grease a mini muffin tin generously (or use silicone molds for easy release).
  3. Blend: In a bowl, whisk eggs until frothy. Add shredded cheese and cream cheese. Mix until well combined. (Use a hand mixer or blender for smoother texture.)
  4. Fill Muffin Cups: Spoon mixture into each cup — fill about 3/4 full.
  5. Bake: Bake for 15–18 minutes, until puffed and golden brown on top.
  6. Cool Slightly: Let cool 5 minutes before removing. They will deflate slightly as they cool — totally normal.

🍽️ Serving Ideas:

  • Great hot or cold.
  • Serve with butter, bacon, or dipped in Hollandaise or egg yolk.
  • Perfect meal prep: pop a few in a container and go!
