🧀🥚 Carnivore Egg & Cheese Puffs
Ingredients:
- 4 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, Gruyère, or a mix)
- 2 tbsp cream cheese (softened)
- Optional: pinch of salt or 1/4 tsp baking powder (makes them fluffier, but skip for strict carnivore)
Instructions:
- Preheat Oven: 375°F (190°C)
- Prep Muffin Tin: Grease a mini muffin tin generously (or use silicone molds for easy release).
- Blend: In a bowl, whisk eggs until frothy. Add shredded cheese and cream cheese. Mix until well combined. (Use a hand mixer or blender for smoother texture.)
- Fill Muffin Cups: Spoon mixture into each cup — fill about 3/4 full.
- Bake: Bake for 15–18 minutes, until puffed and golden brown on top.
- Cool Slightly: Let cool 5 minutes before removing. They will deflate slightly as they cool — totally normal.
