Carnivore Egg Pudding Recipe
This carnivore egg pudding is a rich, creamy dessert made entirely from animal-based ingredients. It’s an indulgent treat that’s both satisfying and perfectly in line with a carnivore diet.
Ingredients:
- 4 large eggs (preferably pasture-raised)
- 1/2 cup heavy cream (or more, depending on desired richness)
- 2 tbsp butter (grass-fed if possible)
- 1/4 tsp salt
- 1/2 tsp vanilla extract (optional, for added flavor; omit for strict carnivore)
- 1 tbsp erythritol (optional, for a touch of sweetness; omit for strict carnivore)
- 1/2 cup bone broth (optional, for added richness and collagen)
- A pinch of ground cinnamon or nutmeg (optional)
Instructions:
- Prepare the Pudding Mixture:
- In a mixing bowl, crack the eggs and whisk them until fully combined, creating a smooth mixture.
- Add the heavy cream, bone broth (if using), and salt to the eggs. If you’re using vanilla extract and erythritol for flavor, add them in at this stage. Mix everything together until the ingredients are fully incorporated.
- Heat the Butter:
- In a medium saucepan, melt the butter over medium-low heat. Be careful not to let it brown—just gently melt it.
- Cook the Pudding:
- Slowly pour the egg mixture into the melted butter while stirring constantly. This will ensure the eggs don’t scramble.
- Continue to cook the mixture over low heat, stirring constantly for 5-10 minutes, until it thickens to a custard-like consistency. If you’re using a thermometer, aim for around 170°F (77°C).
- Be patient! Stir continuously and do not allow the mixture to boil.
- Strain and Cool:
- Once thickened, remove the pudding from the heat. If you prefer a silky smooth texture, you can strain the mixture through a fine mesh sieve to remove any cooked egg bits.
- Pour the pudding into serving bowls or ramekins and allow it to cool slightly at room temperature, then refrigerate for at least 2 hours or until chilled.
- Serve:
- Optionally, garnish with a sprinkle of cinnamon or nutmeg before serving. This pudding is rich, creamy, and indulgent, making it the perfect carnivore-friendly dessert.
Enjoy your carnivore egg pudding as a satisfying treat after a hearty meal!
