🧈 Carnivore English Muffins (Microwave or Oven Method)
Makes: 1 large muffin (split into 2 halves)
Prep Time: 3 minutes
Cook Time: 2 minutes (microwave) or 10 minutes (oven)
Ingredients:
- 1 tbsp butter (plus extra for greasing)
- 1 tbsp cream cheese (softened)
- 1 egg
- 1 tbsp grated Parmesan or shredded mozzarella (for texture)
- 1 tbsp unflavored collagen powder or egg white powder (optional, for firmness)
- Pinch of salt
Instructions (Microwave Method):
- Melt Butter:
In a microwave-safe ramekin or wide mug (4″ diameter), melt 1 tbsp butter. - Mix Batter:
Add the cream cheese, egg, cheese, collagen/egg white powder (if using), and salt. Whisk until smooth and well blended. - Microwave:
Microwave for 90 seconds to 2 minutes, until the top is firm and the sides pull away from the edges. - Slice & Toast:
Let cool for 1 minute. Carefully remove and slice in half. Toast both sides in a dry skillet or toaster until golden brown.
Instructions (Oven Method):
- Preheat oven to 350°F (175°C).
- Mix batter as above and pour into a greased 4″ ramekin or silicone muffin ring.
- Bake for 10–12 minutes or until set.
- Let cool slightly, slice, and toast in a pan for that golden crust.
