Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
🥩 Ingredients:
-
1 ½ cups shredded mozzarella cheese (or cheddar, or a mix)
-
½ cup grated Parmesan cheese
-
2 large egg yolks
-
4 oz cream cheese, softened
-
¼ cup cooked bacon bits or finely chopped cooked beef (optional but tasty)
-
½ tsp garlic powder (optional for more flavor; omit if strict carnivore)
-
¼ cup crushed pork rinds (for coating; or use grated Parmesan for 100% carnivore)
-
1 egg (for egg wash)
-
Beef tallow, lard, or ghee (for frying – avoid vegetable oils)
🔪 Instructions:
-
Make the cheese mixture:
-
In a bowl, mix shredded cheese, Parmesan, cream cheese, egg yolks, and optional meat or garlic powder.
-
Stir until it forms a sticky, cohesive mixture.
-
-
Form into balls:
-
Roll the mixture into 12 small balls (about 1 inch in diameter).
-
Place them on a tray lined with parchment paper and chill in the freezer for 10–15 minutes to firm up.
-
-
Prep the coating:
-
In one bowl, beat the egg (egg wash).
-
In another bowl, place crushed pork rinds or extra Parmesan cheese.
-
-
Coat the balls:
-
Dip each chilled cheese ball in the egg wash, then roll it in the coating to fully cover.
-
-
Fry the cheese balls:
-
Heat beef tallow, lard, or ghee in a small saucepan or deep skillet over medium-high heat (about 350°F / 175°C).
-
Fry the cheese balls in batches until golden brown (about 2–3 minutes each side).
-
Remove and place on paper towels to drain excess fat.
-
-
Serve hot with optional dipping sauces like melted butter or a fatty meat reduction.
🧊 Storage:
-
Leftovers can be stored in the fridge for up to 3 days.
-
Reheat in an oven or air fryer to maintain crispiness.
