Carnivore-Friendly Beef Liver Paté
Ingredients:
- 1 kg beef liver (trimmed and diced)
- 300 g bacon (diced)
- 300 g butter (grass-fed, if possible)
- Salt (to taste)
- Pepper (optional, or omit for strict carnivore)

Prepare the Ingredients:
- Dice the beef liver, bacon, and set aside.
- If using, finely chop or mince the garlic (optional, skip for strict carnivore).

Cook the Onion and Garlic (Optional for Strict Carnivore):
- In a large skillet, melt 25g of butter over medium heat.
- Add diced onion (if using) and cook for 2-3 minutes until softened. (Skip if you are following strict carnivore).

Cook the Bacon and Liver:
- In the same skillet, add the diced bacon and cook until it starts to become crispy.
- Add the diced beef liver and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Make sure the liver is well browned for flavor.

Combine the Liver and Bacon Mixture:
- Once the liver and bacon are cooked, mix them together in the skillet with any juices.
- Season with salt and pepper (if using).

Blend the Paté:

- Melt the remaining butter (around 250g).
- In a food processor or blender, add a few tablespoons of the liver and bacon mixture, followed by the melted butter.
- Blitz for 10-15 seconds until smooth.
- Gradually add the remaining liver mixture in small portions until everything is blended and smooth.

Chill the Paté:
- Spoon the liver paté into a ramekin or container.
- Pour a little extra melted butter on top to preserve the paté.
- Refrigerate for at least 4 hours, or overnight, to set.

Serve:
- Once chilled, the paté is ready to enjoy!
- Serve on its own or with carnivore-friendly accompaniments like thin slices of cured meat.
Notes:
- If you’re sticking to a strict carnivore diet, omit the onion, garlic, and pepper.
- Beef liver is nutrient-dense, rich in vitamin A, B12, and iron, making this paté a great addition to a carnivore diet.
