Carnivore Ice Cream
Ingredients:
- 2 cups heavy cream (full-fat, preferably grass-fed)
- 4 large egg yolks
- 1/4 cup butter (melted, for richness)
- 1 tsp vanilla extract (optional, skip for strict carnivore)
- Pinch of salt
- 1-2 tbsp powdered beef gelatin (optional, for extra creaminess and texture)
- 1-2 tbsp honey (optional, if you allow a small amount of sweetness on your carnivore diet)

Prepare the Ice Cream Base:
- In a saucepan, heat the heavy cream and butter over low to medium heat. Stir occasionally until the butter is melted, and the cream is warm (but not boiling).

Whisk the Egg Yolks:
- In a separate bowl, whisk the egg yolks and salt. If you’re adding honey, whisk it in at this point.

Temper the Eggs:
- Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking constantly to temper the eggs (this prevents them from scrambling).
- Gradually add the rest of the warm cream mixture into the eggs, whisking continuously.

Cook the Custard:
- Pour the egg-cream mixture back into the saucepan. Heat over low to medium heat, stirring constantly. Cook for 5-10 minutes, until the mixture thickens to a custard-like consistency. If using beef gelatin, sprinkle it in at this point and stir until dissolved.

Cool the Mixture:
- Once the custard has thickened, remove it from the heat. Allow it to cool to room temperature, then refrigerate for 1-2 hours or until completely chilled.

Churn the Ice Cream:
- Once chilled, pour the custard into an ice cream maker. Follow the manufacturer’s instructions for churning (usually about 20-30 minutes). The ice cream should have a smooth, creamy texture.

- Transfer the churned ice cream to a container and freeze for at least 4 hours or overnight until it hardens to your desired consistency.

Notes:
- Sweetener: The honey is optional. If you’re strictly carnivore, you can skip it, and the ice cream will still be rich and creamy due to the butter and egg yolks.
- Vanilla: If you’re following a strict carnivore diet, skip the vanilla extract to keep it fully animal-based.
- Gelatin: The beef gelatin is optional but helps create a smoother, more ice cream-like texture without adding any non-animal ingredients.
