carnivore Ice Cream Recipe (Kid-Friendly & Protein-Packed)
This creamy, indulgent ice cream is designed for those following the carnivore diet but still crave a sweet treat that even kids will love. It’s made with minimal ingredients while delivering a delicious, high-protein dessert.
Ingredients:
- 2 cups heavy whipping cream (full-fat)
- 1 cup beef bone broth (cooled or at room temperature)
- 4 egg yolks (preferably from pasture-raised eggs)
- 2 tbsp collagen peptides (unflavored)
- 2 tbsp butter (grass-fed preferred)
- 1/4 cup powdered erythritol (or to taste, for sweetness)
- 1/2 tsp vanilla extract (optional, for added flavor)
Instructions:
- Prepare the Egg Custard: In a medium saucepan, melt the butter over medium heat. Once melted, add the bone broth and bring it to a low simmer. In a separate bowl, whisk the egg yolks and erythritol until smooth and slightly thickened.
- Temper the Eggs: Slowly pour the warm bone broth mixture into the egg yolks while constantly whisking to avoid curdling. This process, called tempering, ensures that the eggs don’t scramble. Once combined, return the egg mixture to the saucepan and cook over low heat, stirring constantly for about 5-7 minutes until it thickens. Make sure the custard coats the back of a spoon.
- Combine with Cream: Remove the saucepan from the heat and stir in the collagen peptides until fully dissolved. Let the mixture cool for about 5 minutes. Next, add the heavy whipping cream and stir to combine. If using, add the vanilla extract for extra flavor. Let the mixture cool to room temperature, then refrigerate for at least 2-3 hours, or overnight.
- Churn the Ice Cream: Pour the cooled mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually around 20-25 minutes). If you don’t have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer. Stir every 30 minutes until it reaches a creamy consistency, typically about 3 hours.
- Serve and Enjoy: Once churned, transfer the ice cream to a freezer-safe container. Freeze for an additional 1-2 hours for a firmer consistency. Serve and enjoy this rich, protein-packed ice cream that’s sure to be a hit with the whole family!
Tips:
- For an even creamier texture, add an additional 1/2 cup of cream or a bit more collagen peptides.
- You can add optional toppings like crispy bacon bits for an extra carnivore twist!
