Carnivore Lamb Chops with Anchovy Butter
Ingredients:
For the Lamb Chops:
- 8 lamb chops (about 1-inch thick)
- 2 tbsp beef tallow or lamb fat (for cooking)
- 2 cloves garlic, minced (optional, for flavor)
- Salt to taste
For the Anchovy Butter:
- 4 anchovy fillets, minced
- 1/2 cup unsalted butter (preferably grass-fed)
- 1 tbsp beef tallow or lamb fat (optional, to enhance flavor)
- Salt to taste
Instructions:
- Prepare the Lamb Chops:
- Season the lamb chops generously with salt.
- In a skillet or on a grill, heat the beef tallow or lamb fat over medium-high heat. If using garlic (optional), you can add the minced garlic to the fat and sauté for 1 minute until fragrant, then remove the garlic.
- Add the lamb chops to the skillet or grill and cook for about 3-4 minutes per side, or until they reach your preferred doneness (medium-rare is ideal). Allow the chops to rest for a few minutes after cooking.
- Prepare the Anchovy Butter:
- In a small saucepan, melt the butter and beef tallow (if using) over low heat.
- Stir in the minced anchovies and cook for about 1-2 minutes, allowing the anchovies to dissolve into the butter and infuse the flavor.
- Season with salt to taste. If you prefer a smoother butter, you can blend it briefly with an immersion blender.
- Serve:
- Drizzle the anchovy butter over the cooked lamb chops or serve it on the side for dipping. Enjoy the rich and savory flavor combination!
This strictly carnivore version eliminates any plant-based ingredients, using only animal fats and butter, while keeping the rich flavors intact. Enjoy this satisfying and protein-packed meal!
