Carnivore Linguine Alfredo with Roasted Pork

🔪 Ingredients

For the Roasted Pork:

  • 2 lbs pork shoulder or pork loin

  • 1 tbsp olive oil or animal fat (e.g., bacon grease)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp smoked paprika (optional)

For the Alfredo Sauce:

  • 1½ cups heavy cream

  • ½ cup unsalted butter (1 stick)

  • 1½ cups freshly grated Parmesan cheese

  • 2 cloves garlic, minced (or 1 tsp garlic powder for strict carnivore)

  • Salt and pepper to taste

For the Pasta:

  • 12 oz linguine (or substitute with keto/carnivore pasta if desired)

    • Optional: Try carnivore pasta made with egg and cheese or egg white noodles

🍳 Instructions

1. Roast the Pork:

  1. Preheat oven to 375°F (190°C).

  2. Pat pork dry and rub with olive oil, salt, pepper, garlic powder, and paprika.

  3. Place in a roasting pan or cast iron skillet.

  4. Roast uncovered for 45 minutes to 1 hour (until internal temp reaches 145°F).

  5. Let rest 10–15 minutes, then slice thin or shred.

2. Cook the Linguine:

  1. In a large pot, boil salted water.

  2. Cook linguine to al dente per package instructions.

  3. Drain and set aside. Toss lightly in butter or oil to prevent sticking.

3. Make the Alfredo Sauce:

  1. In a saucepan, melt butter over medium heat.

  2. Add garlic (if using) and sauté until fragrant (about 30 seconds).

  3. Add heavy cream and bring to a gentle simmer.

  4. Reduce heat and stir in Parmesan until melted and smooth.

  5. Season with salt and pepper to taste.

4. Combine:

  1. Add cooked linguine to the Alfredo sauce. Toss to coat.

  2. Stir in sliced or shredded roasted pork.

  3. Let everything simmer together for 2–3 minutes to meld flavors.

🧀 Optional Garnishes:

  • Extra Parmesan

  • Crumbled crispy bacon

  • Fresh herbs (parsley or chives – omit for strict carnivore)

🐷 Tips:

  • For extra carnivore points, skip the pasta and serve over egg-based noodles or thick-cut bacon slices.

  • Make it spicier with red pepper flakes or hot sauce.
