Carnivore Loaded Chicken Salad

Ingredients:

  • 2 cups cooked chicken (shredded or diced) — rotisserie or boiled works great

  • ½ cup mayonnaise (make sure it’s egg and oil-based, no sugar)

  • ¼ cup heavy cream or sour cream (for creaminess)

  • 3 strips crispy bacon, chopped

  • 2 oz shredded cheddar or mozzarella cheese

  • 1 tsp Dijon mustard (optional, if you do strict carnivore you can omit)

  • Salt (Redmond’s or sea salt), to taste

  • Optional: chopped hard-boiled eggs for extra protein/fat


Instructions:

  1. Mix shredded chicken, mayo, cream/sour cream, and mustard in a bowl until well combined.

  2. Fold in chopped bacon, cheese, and salt.

  3. Chill for 30 minutes to let flavors meld.

  4. Serve cold, on its own or with a side of crispy pork rinds or more cheese slices.


Tips:

  • Use leftover roasted chicken for easy prep.

  • Swap mayo for homemade aioli if you like garlic flavor and it fits your diet.

  • For extra richness, add a little rendered chicken fat or bacon grease.
