Carnivore Loaded Chicken Salad
Ingredients:
-
2 cups cooked chicken (shredded or diced) — rotisserie or boiled works great
-
½ cup mayonnaise (make sure it’s egg and oil-based, no sugar)
-
¼ cup heavy cream or sour cream (for creaminess)
-
3 strips crispy bacon, chopped
-
2 oz shredded cheddar or mozzarella cheese
-
1 tsp Dijon mustard (optional, if you do strict carnivore you can omit)
-
Salt (Redmond’s or sea salt), to taste
-
Optional: chopped hard-boiled eggs for extra protein/fat
Instructions:
-
Mix shredded chicken, mayo, cream/sour cream, and mustard in a bowl until well combined.
-
Fold in chopped bacon, cheese, and salt.
-
Chill for 30 minutes to let flavors meld.
-
Serve cold, on its own or with a side of crispy pork rinds or more cheese slices.
Tips:
-
Use leftover roasted chicken for easy prep.
-
Swap mayo for homemade aioli if you like garlic flavor and it fits your diet.
-
For extra richness, add a little rendered chicken fat or bacon grease.
