🧀 Carnivore “Mac” and Cheese (Baked & Ultra Comforting)
No noodles, no carbs — just meat and cheese, baked to bubbly perfection.
🥩 Ingredients:
-
1.5 lbs ground beef (or ground pork/chicken/turkey)
-
6 large eggs
-
1 cup heavy cream
-
2 oz cream cheese, softened
-
2 cups shredded cheddar cheese (divided)
-
1/2 cup grated Parmesan cheese (optional for more cheesy punch)
-
Salt to taste
-
Optional: ½ tsp mustard powder or pinch of garlic powder (if ketovore)
🔪 Instructions:
-
Preheat oven to 375°F (190°C)
-
Brown the meat:
In a large skillet, cook the ground beef over medium-high heat. Season with salt. Break it up into small pieces (think “pasta” texture). Drain excess fat if desired. -
Make the cheese “sauce”:
In a bowl, whisk together:-
6 eggs
-
1 cup heavy cream
-
Cream cheese
-
1 cup shredded cheddar
-
(Optional: mustard powder or garlic powder if you’re lenient)
-
-
Assemble the casserole:
In a greased 9×9 or 8×8 baking dish:-
Spread the cooked ground beef on the bottom
-
Pour the cheese sauce over the top
-
Sprinkle the remaining 1 cup shredded cheddar and Parmesan on top
-
-
Bake:
Bake uncovered for 30–35 minutes, or until bubbly, golden, and center is set. -
Cool and serve:
Let sit for 10 minutes before slicing — it firms up as it cools.
🍽️ Optional Add-Ins (still carnivore):
-
Diced bacon mixed into the meat layer
-
Ground chicken “noodles” for variety
-
Pork rinds crushed on top for crunch (like a breadcrumb topping)
🧊 Storage:
-
Fridge: 4–5 days
-
Freezer: Cut into slices and freeze for easy reheating
