Ingredients:

  • For the Meatballs:
    • 1 lb ground beef (preferably 80/20 for flavor and moisture)
    • 1/2 lb ground pork (adds moisture and flavor, optional)
    • 1 cup shredded mozzarella cheese (preferably whole milk for better melt)
    • 1 egg (helps bind the mixture)
    • 1/4 cup grated Parmesan cheese (optional for extra flavor)
    • 1 tsp garlic powder (optional, for added taste)
    • 1/2 tsp onion powder (optional, depending on your preferences)
    • 1/2 tsp ground black pepper
    • 1/4 tsp salt (adjust based on preference)
    • 2 tbsp fresh parsley (optional for garnish)
  • For the Stuffing:
    • 4 oz mozzarella cheese, cut into small cubes (to stuff inside the meatballs)
  • For Cooking:
    • 2 tbsp butter (for frying)
    • 2 tbsp olive oil (for frying)

Instructions:

  1. Prepare the meatball mixture:
    • In a large bowl, combine the ground beef, ground pork (if using), egg, Parmesan cheese, garlic powder, onion powder, black pepper, and salt. Mix thoroughly using your hands or a spoon until well-combined. Add in the shredded mozzarella cheese and mix again. The cheese will help keep the meatballs moist.
  2. Prepare the mozzarella stuffing:
    • Cut the fresh mozzarella into small cubes—about 1-inch pieces. These cubes will be stuffed inside the meatballs to create that delicious cheesy center.
  3. Form the meatballs:
    • Take a small amount of the meatball mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella in the center and then carefully seal the meatball around the cheese, making sure it’s fully enclosed. Repeat this process for all meatballs.
  4. Cook the meatballs:
    • Heat the butter and olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches (to avoid overcrowding). Fry the meatballs for 8-10 minutes, turning occasionally, until golden brown on all sides and cooked through. Ensure the internal temperature reaches 160°F (71°C).
  5. Serve:

Tips:

  • If you prefer baking, preheat your oven to 375°F (190°C) and bake the meatballs for 20-25 minutes until they’re golden brown and cooked through.
