Carnivore Mozzarella Stuffed Meatballs,
Ingredients:
- For the meatballs:
- 1 lb ground beef (preferably 80% lean)
- 1/2 lb ground pork (optional for extra flavor)
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh chopped parsley (optional)
- For the filling:
- 4 oz whole milk mozzarella cheese (cut into small cubes)
- For cooking:
- 2 tbsp butter or tallow (for frying)
Instructions:
1. Prepare the Mozzarella Filling:
- Cut the mozzarella into small cubes, about 1/2 inch each. Set aside.
2. Make the Meatball Mixture:
- In a large mixing bowl, combine the ground beef, ground pork (if using), egg, Parmesan, garlic powder, onion powder, salt, and pepper.
- Mix everything together using your hands or a spoon until well combined. The mixture should be firm enough to shape into meatballs. If it feels too loose, add more Parmesan cheese to help bind it.
3. Stuff the Meatballs:
- Take about 2 tablespoons of the meat mixture and flatten it into a patty in the palm of your hand.
- Place a cube of mozzarella cheese in the center of the patty and carefully fold the meat around the cheese. Roll the meatball between your hands to seal it completely.
- Repeat this process until all the meatballs are formed.
4. Cook the Meatballs:
- In a large skillet, heat the butter or tallow over medium-high heat.
- Once the fat is hot and melted, add the meatballs, being careful not to overcrowd the pan. Cook the meatballs for about 3-4 minutes on each side, turning gently until they’re browned and cooked through (internal temperature should reach 160°F).
- If needed, you can finish cooking them in the oven at 350°F for an additional 10-12 minutes.
5. Serve:
- Once cooked, remove the meatballs from the pan and let them rest for a few minutes. This helps prevent the cheese from spilling out too much.
- Serve immediately with a side of your choice (if desired), or enjoy them as they are.
Tips:
- For extra flavor, you can season the meatballs with more herbs like thyme or oregano, but for a strict carnivore version, stick to basic seasonings like salt and pepper.
- The mozzarella will melt into a gooey center, making each bite a cheesy delight.
These Carnivore Mozzarella Stuffed Meatballs are perfect for satisfying hunger while staying in line with a zero-carb or carnivore diet. Enjoy!
