Carnivore Pork Chops with Creamy Bacon Pan Sauce
Ingredients:
- 2 bone-in pork chops (or boneless, if preferred)
- 4 slices bacon (thick-cut)
- 2 tbsp butter (or animal fat like lard or tallow)
- 1/2 cup heavy cream (make sure it’s full-fat and no added sugar)
- 1/2 cup chicken or beef bone broth (preferably homemade or sugar-free)
- Salt, to taste
- Freshly ground black pepper (optional, depending on how strict your carnivore approach is)
- 1 tsp fresh rosemary or thyme (optional, for garnish)
Instructions:
- Cook the Bacon:
- In a large skillet, heat the bacon slices over medium heat. Cook until crispy, about 4-5 minutes per side. Remove the bacon from the skillet and set it aside on a paper towel to drain excess fat. Leave about 1-2 tablespoons of bacon grease in the skillet.
- Sear the Pork Chops:
- Season the pork chops with salt and pepper (if using). In the same skillet with the bacon grease, add 1 tablespoon of butter (or animal fat). Let it melt, then add the pork chops. Sear the pork chops for 4-5 minutes on each side, until golden brown and cooked through (internal temperature should reach 145°F or 63°C). Remove from the skillet and set them aside.
- Make the Creamy Sauce:
- In the same skillet, add the remaining butter. Once melted, pour in the heavy cream and bone broth. Stir to combine and let the sauce simmer over low heat for 3-4 minutes, allowing it to thicken slightly.
- Combine and Finish:
- Crumble the cooked bacon into the sauce, then return the pork chops to the skillet. Spoon the creamy bacon sauce over the chops. Let it cook together for another 2-3 minutes, ensuring the pork chops are coated and the sauce has heated through.
- Serve:
- Plate the pork chops with the creamy bacon pan sauce. Garnish with rosemary or thyme if desired. Serve hot and enjoy your carnivore-friendly meal!
