Carnivore Pork Rind BiscuitsÂ
Ingredients:
- 2 cups pork rinds, crushed (about 3 oz)
- 1 cup shredded mozzarella cheese (or any other cheese you prefer)
- 2 oz cream cheese, softened
- 2 large eggs
- 1/4 tsp baking powder (optional, for a bit of fluff)
- 1/4 tsp salt (to taste)
- 1/4 tsp garlic powder (optional for added flavor)
Instructions:
- Preheat your oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
- Prepare the dry ingredients: In a large mixing bowl, add the crushed pork rinds, shredded mozzarella cheese, baking powder (if using), salt, and garlic powder (if using). Mix everything together.
- Add the wet ingredients: In a separate bowl, whisk the eggs and softened cream cheese together until smooth and well combined.
- Combine the mixture: Add the wet ingredients to the dry ingredients and mix until a dough forms. The mixture should be somewhat sticky but moldable. If it’s too dry, you can add a little more cream cheese or an extra egg.
- Shape the biscuits: Using your hands or a spoon, scoop out portions of the dough and shape them into small biscuit rounds, about 1-2 inches in diameter. Place them on the prepared baking sheet, leaving a little space between each biscuit.
- Bake: Bake in the preheated oven for 10-15 minutes, or until the biscuits are golden brown and firm to the touch.
- Serve: Let the biscuits cool slightly before serving. Enjoy them fresh out of the oven, or store them in an airtight container for up to 3-4 days.
Optional:
- For extra richness, you can melt some butter and brush it on top of the biscuits once they’re out of the oven.
- If you like a stronger cheese flavor, try adding some grated Parmesan into the mix.
