Carnivore Protein Burger
Ingredients:
- 1 lb (450g) ground beef (preferably 80% beef, 20% fat for a juicy burger)
- 1/4 lb (115g) ground pork (adds richness, but you can use all beef if preferred)
- 2 oz (60g) beef liver (optional) (for added nutrients like Vitamin A, B12, iron, etc. You can skip this if you’re not into organ meats)
- 1 egg (helps bind the burger together, adding extra protein)
- 2 tbsp beef tallow (or butter) (for frying the burgers)
- Salt and pepper to taste (only if you want to enhance flavor)
- 1 tsp garlic powder (optional) (you can skip this for strict carnivores but it adds flavor)
- Optional toppings:
- Cheese slices (cheddar, mozzarella, or other cheese of choice)
- Crispy bacon strips (for extra flavor and crunch)
Equipment:
- Large mixing bowl
- Frying pan or grill
- Spatula or tongs
- Meat thermometer (optional, to check doneness)
Instructions:
- Prepare the Meat Mixture
In a large mixing bowl, combine the ground beef and ground pork. If you are using beef liver, finely chop or blend it until it’s smooth, then add it to the meat mixture. You can also use a food processor to blend the liver into the beef for a smoother consistency. - Add Egg and Seasonings
Crack the egg into the meat mixture to help bind the ingredients together. Add a pinch of salt and pepper to taste (optional) as well as garlic powder (optional). Mix all the ingredients well with your hands or a spoon until they are fully incorporated. Be careful not to overmix, as that can lead to a tougher burger. - Shape the Patties
Divide the meat mixture into 4 even portions (or more if you want smaller burgers) and shape them into burger patties. Make them slightly larger than the size of your burger buns, as they will shrink while cooking. Use your thumbs to create a small indentation in the center of each patty to prevent them from puffing up during cooking. - Cook the Burgers
Heat a frying pan or grill over medium-high heat. Once it’s hot, add the beef tallow or butter and let it melt, ensuring the entire surface is coated. Place the patties in the pan or on the grill, and cook for about 4-5 minutes per side for medium doneness. You can use a meat thermometer to check the internal temperature; it should reach around 160°F (71°C) for well-done burgers.Optional: If you’re adding cheese, place a slice of cheese on each patty about 1 minute before the burger is done cooking to allow it to melt.
- Optional Bacon Topping
While the burgers are cooking, you can also fry up some bacon strips in a separate pan. Once crispy, set them aside to add as a topping. - Serve
Once the burgers are cooked to your desired level of doneness, remove them from the pan or grill and let them rest for a couple of minutes. If you’re adding bacon or cheese, place them on top of the burgers now.Serve the burgers on their own, or you can get creative and wrap them in bacon or serve them with a side of crispy pork rinds. For a more indulgent experience, you can also pair them with a carnivore-friendly sauce like melted cheese or a rich beef gravy.
Tips:
- Beef Liver: Adding beef liver is a great way to boost the nutritional value of your burger, especially for essential vitamins like A, B12, and iron. If you don’t have beef liver, you can omit it or replace it with another type of organ meat like heart or kidney for a similar nutrient boost.
- Fat Ratio: The fat content of the ground meat is important for flavor and juiciness. Using a mixture of 80% beef and 20% fat will ensure that the burgers are flavorful and moist. If you prefer a leaner option, you can use leaner cuts, but the burgers may be less juicy.
- Grill or Pan Frying: Grilling the burgers gives them a delicious smoky flavor, while pan-frying with beef tallow adds richness. Both methods work well—choose whichever you prefer!
